Bhagar Dosa / Cheela Recipe – Nutritious Gluten-Free Millet Pancakes
Replace rawa (semolina) from your classic dosa to make a nutritious, gluten-free version. It tastes just as good, if not better Serve hot with potato sabji, daal, or your favourite chutney.

Ingredients
Bhagar or Sonkan’s Upwas Bhajani flour – 2 cups
Sour curd / yoghurt (dahi) – 0.5 cup
Water – to achieve required consistency
Salt – to taste
Pepper – 2 tsp (optional)
Red chilli powder – as per taste (optional)
Oil – 4 tbsp
Garnishes / sides – as per taste (optional)
Preparation Steps
1. Mix the Batter
In a large bowl, combine the sour curd with the bhagar flour. Add a little water and mix thoroughly until smooth.
2. Rest the Batter
Keep the mixture aside for about 2 hours. During this time, prepare your garnishes or sides if using.
3. Adjust Consistency & Season
After resting, add water to achieve a slightly runny batter that is easy to pour. Season with salt, pepper, and red chilli powder as desired.
4. Cook the Dosa / Cheela
Heat a flat pan or tawa and lightly oil it. Pour one ladle of the batter and spread it evenly.
5. Flip & Cook
Cook until the bottom is golden brown, then flip and cook the other side until golden. Remove from heat and serve immediately.
Tip: If storing for later, keep the dosas/cheelas in a covered plate to maintain freshness.
6. Repeat
Repeat the cooking process until all the batter is used.

Optional garnishes like coriander, grated coconut, or chopped veggies
